Ingredients

1 cup flour
1/3 cup water
A key part of the Passover feast, Matzah bread, or Unleavened bread is easy to make.

Instructions

1.Move the top rack in your oven to the very top, put a cookie sheet on the rack and preheat the oven to 475º.
2.Set a timer to 18 minutes and start it. Mix the flour and water together in a bowl and mix with a fork until it forms a ball, this should take no more than 30 seconds.
3.Remove the dough from the bowl and divide into 4 equal pieces then divide each of those in half leaving you 8 small chunks of dough. Sprinkle flour over the clean surface and a rolling pin and roll out each piece of dough until it is very flat and about 8" in diameter.
4.Using a fork poke each piece 20-25 times, making sure that the fork goes all the way through the dough on each poke. Flip the dough and do it again.
5.Remove the cookie sheet from the oven and place the dough on the sheet and put it in the oven. Bake it for 2 minutes and flip the bread and bake for another 2-3 minutes. The whole process should take about 16 minutes but 18 minutes is acceptable.
6.OPTIONAL: Lightly brush each piece of bread on one side with olive oil and lightly salt it with Kosher salt.

Matzah bread, or unleavened bread, plays a central role in Passover. It is extremely easy to make, taking only two ingredients. The only catch to making it, is that it can’t sit for any amount of time prior to cooking because it is not supposed to rise at all. Matzah bread should take only 16 minutes to make from the time you start mixing the flour and water to the time it comes out of the oven.

Matzah bread is very plain, this plainness is on purpose. It helps convey the idea that the Israelites had to leave Egypt in haste when they were freed, therefore they didn’t have time to let their dough rise prior to cooking it.
