2 Avocados (peeled and pitted)
1 Yellow Onion (roughly chopped)
3 cloves Garlic
1 Green Bell Peppers (seeded and de-veined)
1/2 cup Chopped Cilantro
1/2 tsp White Pepper
1 cup Olive Oil
Guasacaca is a popular side with Mexican and Central American cuisine.

Instructions

1.Combine all the ingredients, except for the oil, in a food processor and process until smooth.
2.Slowly add the oil while the processor is running until it is silky smooth.
3.Let it sit in the fridge for about an hour. This will allow the flavors to mix well. Remove from the fridge and let it reach room temperature before serving.

This is one of those recipes that is super simple but I never took the time to make until recently. Guasacaca is a very common sauce used in Central American and Mexican cuisine. The flavor is fantastic and it adds a nice texture and perfect moisture to many dishes like tacos, burritos, nachos and many sandwich type meals. Be sure to serve it at about room temperature to ensure that you’re getting the full effect of the flavors. Also since it’s commonly served on dishes which are best served hot, if you serve it at room temperature the dish you’re adding it to will still be warm and good to eat.

The many fresh ingredients make this avocado sauce very healthy, providing tons of vitamins. This is one of those recipes I like to make and add to everything I eat if I think I’m coming down with a cold.
