Ingredients

4 Eggs
1/2 yellow onion
1 green bell pepper
1 tbsp Turmeric
1/2 tsp salt
1 tsp black pepper
2 slices bread
This is a popular Indian street food that is fast and easy to make. Perfect for breakfast, lunch or a snack.

Instructions

1.Add eggs, turmeric, salt, pepper, onion and pepper to a bowl. Whisk until smooth. Set the mixture aside.
2.Toast the bread.
3.Bring a skillet or griddle to temperature. Pour half the egg mix.
4.Dip one slice of bread on the mix in the griddle to coat one side of the bread with egg mix.
5.Flip the bread over and leave on the mix. Once the egg mix is cooked enough do so, fold the edges up over the slice of bread, forming a kind of egg envelope.
6.Flip the whole envelope over and cook until done. Serve with red pepper sauce, like Sriracha

It’s a great way to get some healthy protein in your diet, and the onion, peppers and hot sauce help give you some vitamin C and capsaicin which is thought to help boost your metabolism. If you aren’t familiar with Indian food, this may be a good way to get introduced to the cuisine.

Bread Omelettes are an inexpensive food. They are also very versatile, we used a more traditional Indian recipe but you could easily adapt it to just about any region. I was very tempted to add things like a slice of ham, cheese, or sausage to mine. I will certainly experiment with ingredients to make it “mine”

One important thing is the size of the skillet or griddle you are using. It has to be big enough to let the egg mix spread out far enough so that when you fold the egg, there is enough to completely enclose the bread.
