Ingredients

1 onion (sliced)
6 minced garlic cloves
4 peeled and diced carrots
2 diced sweet potatoes
1 can garbanzo beans
2 lb chicken tenders
1 tsp ground cummin
1 tsp turmeric
1 tsp ground cinnamon
1 tsp dried parsley
1/2 tsp salt
1 cup diced tomatoes

Instructions

1.Place the onion, garlic, carrots, sweet potatoes, garbanzo beans, and chicken breast pieces into a slow cooker.
2.In a bowl, mix the cumin, turmeric, cinnamon, black pepper, parsley, and salt and sprinkle over the chicken and vegetables.
3.Pour in the tomatoes, and stir to combine.
4.Cover the cooker and set to High.
5.Cook until the sweet potatoes are tender and the sauce has thickened, 4 to 5 hours.

The flavors in Chicken Marrakesh are amazing! Yet even though the taste is fantastic this is a very easy recipe to follow. You cook it in the Crock pot or slow cooker. It comes out as a very thick stew and goes great served with flat bread.

Normally we’re not big fans of sweet potatoes, they’re just too sweet for our taste. But in this recipe their sweetness is tempered by the other ingredients and that sweet taste helps bring out the flavor of everything else. That interaction creates a perfect way to bring out the tastes of all the ingredients.

Since this stew has so much flavor it’s really nice to have something with a more neutral taste, like flat bread, to eat on the side. The flat bread is also great for scooping bites out. As with most of our recipes, we went light on the salt since we prefer to taste the other ingredients instead of just tasting salt. If you prefer more salt go ahead.
