4 Chicken Thighs
2 Red Onions
1 lemon
3 tbsp Sumac
1/2 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp All Spice
1/4 cup toasted pine nuts
4 flat bread
3 cloves garlic
Black pepper and Salt to taste
1/2 cup olive oil

Recipe Instructions

1.Preheat oven to 350º
2.Mix dry spices together using 2 tsbp of sumac. Save the other tbsp for later
3.Generously cover the chicken the the spices
4.Squeeze 1/2 lemon over the chicken
5.Heat 3-4 tbsp olive oil in a cast iron skillet
6.Place the chicken, skin side down, in the skillet. Fry until that side is browned. About 4 minutes
7.Flip the chicken and place the skillet in the oven. Roast for 50 minutes
8.While the chicken is cooking. Chop the onions and garlic cloves.
9.Heat olive oil in a wide skillet then add the onions to the pan. Saute the onions, stirring regularly until carmelized. It should take about 15 minutes.
10.Add the garlic and 1 tbsp of sumac to the onions. Stir it all together and cook for another 4-5 minutes.
11.Once it's done cooking, remove the chicken from the oven and squeeze the second half of the onion over the chicken.
12.Spread the onion mix over a peice of flatbread and place one chicken thigh on it. Sprinkle the toasted pine nuts over it.
13.Serve and enjoy.
