1 1/2 cup Flour
1/2 tsp Mustard Powder
2 eggs
1 1/2 cup Milk
6 Bangers or Pork Sausage
2 Leeks (sliced and separated into rings)
1 tsp brown sugar
2 cups Beef Stock
3 sprigs Thyme (leaves only)
2 tbsp Oil
1 pinch Black Pepper
1 Bay Leaf


1.Preheat oven to 400º. Combine flour, mustard powder and salt in a mixing bowl. Make a pit or well in the center of the pile and crack the egg into the well. Dribble in a little bit of milk, gradually incorporate the flour in to the well while mixing until you have a smooth batter in the well. Add a little more milk and stir slowly widening the well while incorporating the flour on the outside edge of the well. Continue this process until all the milk has been added and mixed with the flour. The resulting batter should be smooth. Stir in the thyme at this point and set the mix aside
2.Put your sausages in a 8x11 metal roasting pan. Add 1 tbsp oil and make it coat the entire pan with the oil. Put the pan in the oven for 15 minutes.
3.Remove the hot pan from the oven and pour in the batter. Since the pan is hot the batter will likely sizzle and pop. Put it back in the oven and bake for 40 minutes.
4.While batter and bangers are cooking make the gravy. Put the remaining oil in a frying pan and heat up to 400º. Add the leeks and cook, stirring constantly. Cook for about 20 minutes. Sprinkle in the brown sugar and stir it in. Stir in 1 tbsp of flour and cook for about 2 minutes until the flour has lightly covered the leeks. Gradually pour in the beef stock, stirring constantly. Bring to a light bubble then season with the bay leaf, salt and pepper.
5.Once the toad in the hole is done baking, cut into wedges and serve with gravy spooned over the wedge

Toad in the Hole is a fun and easy dish to make that provides you with a rich tasting main course. The recipe calls for bangers, a sausage common in England but not so common in the US, if you can’t find them a pork bratwurst sausage can be used. The batter used is commonly known as Yorkshire Pudding. So if you ever wanted to try Yorkshire Pudding, follow the instructions for the batter and don’t add the bangers. I’ve also included a picture of the Toad in the Hole before cutting into wedges and without the gravy
