Ingredients

1 package of Phyllo Dough
3 lbs of Apples (peeled, cored, and sliced)
1 Tbsp of Lemon Juice
1 tsp of Ground Cinnamon
1/2 tsp of Vanilla Extract
1/8 tsp Nutmeg
1/8 tsp Allspice
1/8 tsp Salt
1 cup Water, divided
3 Tbsp Cornstarch
1 cup of Apple Juice
Cinnamon Sugar
Whipped Cream for topping
Caramel Sauce for drizzling
These Apple Pie cups are sure to be a hit at your next dinner.

Instructions

1.In a large sized saucepan over medium heat combine the apple slices, 1/2 cup of water, sugar, cinnamon, salt, nutmeg, allspice, lemon juice, and vanilla extract.
2.Stir everything together and let it cook with the lid on for about 10-12 minutes or until the apples have softened.
3.Stir every few minutes and lower the heat if it starts to boil or the apples stick to the bottom.
4.In a small bowl or measuring cup, whisk together the cornstarch and remaining 1/2 cup of water until the cornstarch has dissolved.
5.Pour the cornstarch mixture over the apples then stir until combined.
6.Continue cooking and stirring the filling for another 4-6 minutes or until it has thickened.
7.Preheat oven to 350 F. Lightly grease a standard muffin pan.
8.Place a sheet of phyllo dough on parchment paper. Lightly spray with apple juice and sprinkle cinnamon sugar mixture over sheet. Repeat layering until you have 4 sheets stacked up.
9.Using a sharp knife or pizza cutter, cut the stack into 6 equal pieces.
10.Press each piece into the cups of a muffin pan.
11.Bake for about 15-17 minutes or until golden brown.
12.Remove from the oven, let cool for a few minutes then remove the phyllo cups from the muffin pan.
13.Fill each phyllo cup with the apple pie mixture. Top with whip cream and drizzle with caramel sauce.

These Apple Pie Cups are a great individual sized dessert. We served them at a dinner party and they were a huge success. Each serving is perfect for a nice sweet dessert. We got several comments about how beautiful they were. They are not hard to make and don’t take a long time to make.
