Ingredients

2 lb Chicken tenders
2 cups buttermilk
1 cup flour
1 tsp Chipotle Chili Powder
1 1/2 tsp Parsley flakes
1 1/2 tsp Paprika
1 tsp Poultry Seasoning
1 tsp Crushed Thyme
Salt and pepper to taste
2 cups Bread Crumbs
2 tsp Canola oil or cooking spray
Waffle mix
Maple Syrup
Chicken and Waffles is a bold flavored comfort food that started in the southern United States but has gained popularity across the country. Your family and friends will love this recipe!

Instructions

1.Mix the buttermilk, chili pepper and poultry seasoning. Place the chicken tenders in a zip lock bag and pour in the buttermilk mix. Put in the fridge to marinate for about 4 hours.
2.Remove one tender and dip it in the egg, then the flour mix and lastly in the breadcrumbs. Then set on a rack or plate. Repeat the process for all the tenders.
3.In the third bowl mix the breadcrumbs, parsley flakes, paprika, and thyme.
4.In the second bowl mix the flour, salt and pepper. You can add some more chipotle chili powder to bring in more spiciness.
5.Spray or sprinkle the oil on the tenders. This should be a very light application of oil.
6.Place the tenders in the air fryer and cook at 400º for 8 minutes, turn the tenders and cook for another 6-7 minutes.
7.Place the chicken tenders on the waffles and drizzle a little syrup over everything. Serve and eat while still hot.

I use 1 1/2 tsp to keep it hot. You’ll notice that the recipe calls for 1 tsp chipotle chili powder, which is what most people like but feel free to adjust the amount to your taste.

Using an air fryer makes this go pretty quick, without a lot of oil. I really like how the chicken still comes out juicy with a crispy breading. It’s that crispiness that is offset by the spongy texture of the waffles. If you choose to use a standard oven, bake it at 425º for about 30 minutes, then flip the chicken and bake for another 20 minutes. It won’t be as crispy, but it will work.

As a final note, it’s well worth it to buy real maple syrup for this instead of the cheap sugary syrup. The smooth texture and richer flavor that real maple syrup brings is well worth the extra expense.
