Ingredients

2 very ripe bananas
1/3 cup melted butter
1 tsp baking soda
2/3 cup sugar
1 large egg
1/2 tsp vanilla extract
1/2 tsp coconut extract
1/2 cup coconut flakes
1 1/2 cup all-purpose flour
Banana Coconut Bread is a great variation on the standard banana bread. Sure to impress anyone you choose to share it with

Instructions

1.Preheat your oven to 350º and butter or spray non-stick spray on aa 4x8 loaf pan
2.Mash the bananas in a mixing bowl with a spoon. Then mix in the melted butter
3.Mix in the baking soda and salt, Then stir in the sugar, egg, coconut flakes, vanilla extract and coconut extract.
4.Stir in the flour
5.Pour the batter into your prepared pan. Bake for 55 minutes or until a toothpick inserted in the center comes out clean.
6.Remove from the oven and let it cool in the pan for a few minutes. Remove it from the pan and let it cool until it's ready to serve.

Banana Coconut bread makes a great dessert or a nice sweet snack. Whenever we have bananas that are getting a little too ripe for eating by themselves we make up some banana bread. One time we decided to try adjusting our recipe to include coconut and BAM, we had a new favorite. Over time we made some adjustments to make it perfect and now we’re sharing it with you.

When we make banana coconut bread we alternate between adding chocolate chips or no chips. It really depends on the mood we’re in. This recipe has chocolate chips for a little extra sweetness.

When you serve it, you can either just slice it up and eat it or another really popular option is to add a little whipped cream to a slice. The whipped cream combined with the banana and coconut makes an incredible dessert.
