Chicken provides a good, clean source of protein. You could use another meat or even tofu depending on the texture and protein amount you want in your dish. I chose chicken for it’s light taste because it makes a perfect canvas for the all of other flavors to work on.

If you prefer, you can use pasta instead of mashed potatoes for the base. I’ve made it both ways with great success.
