10 Chicken breasts
2 cans black beans
2 cans corn
2 cups quinoa
2 red peppers (chopped)
13-15 asparagus stalks (chopped)

Instructions

1.Preheat oven to 350. Season the chicken breasts with salt and pepper to taste. Bake the chicken for 50 minutes
2.Add two cups of uncooked quinoa to a pot with 4 cups water. Bring the water to a bowl. Turn the heat down to low, put a lid on the pot and let cook for 15 minutes.
3.Chop the asparagus and pepper. Drain the corn an beans
4.Once the chicken is cooked, slice it into roughly bite size pieces.
5.Add one chicken breast, 1/3 cup quinoa, and 1/2 cup of each other ingredient to a freezer/microwave safe container.
6.Store the lunches in freezer until you need them.
