Grilled squash topped with ricotta cheese is a simple yet elegant dish that celebrates the natural sweetness and delicate texture of summer squash. When cooked over an open flame or hot grill, the squash transforms—its firm flesh softens into buttery tenderness, and its sugars caramelize just enough to create a subtle sweetness. Each wedge bears beautiful char marks that add a rustic appeal and a hint of smokiness that elevates the mild flavor of the vegetable.

The smoky aroma hits first, followed by the warmth of perfectly grilled squash that yields easily to the fork. The heat from the grill draws out a depth of flavor you won’t find with steaming or sautéing—earthy, slightly nutty, and kissed with just enough smoke to give each bite character without overpowering the natural freshness of the squash. Paprika provides great color and flavor to the experience..

Topping it with creamy ricotta cheese adds a luxurious contrast. The cool, velvety ricotta melts gently against the warm squash, creating a rich, smooth accent that balances the charred edges below. Its subtle sweetness and mild tang complement the smokiness beautifully.

Whether served as a side dish, light lunch, or appetizer, grilled squash with ricotta is as comforting as it is refined. It’s a dish that feels both rustic and sophisticated—one that celebrates the flavors of summer with minimal ingredients and maximum flavor. Each bite captures that perfect balance between smoky and creamy, tender and crisp, making it a memorable addition to any meal, especially when enjoyed outdoors on a warm evening.
