Ingredients

4-5 lb Potatoes
2 tbsp Butter
1/2 cup White Flour
1/2 tbsp dried Thyme
8 Green Onions, chopped
8 oz Chicken Stock
6 Cups Water
1/4 Cup Cooked Bacon, finely chopped
1 tsp bacon grease (optional)
1/2 tbsp Dreid Oregano
Salt and Pepper to taste
Potato chowder is a thick creamy soup that is perfect for a cold day for when you want a nice hearty soup. You can choose a lot of different toppings.

Instructions

1.Peel the potatoes, Then either cut them into small cubes or grate them.
2.Add everything except the bacon and three tbsp of the green onions.
3.Cook on medium for 30 minutes or until the potatoes are soft.
4.In a saucepan melt the butter. Once melted stir in the flour to form a thin paste. Then stir it into the soup to thicken it, simmer the soup for 10 minutes to help it thicken.
5.Serve the soup with green onions, bacon and sour cream

Potato chowder is the perfect meal for a cold or rainy day. It warms you up nicely and leaves you feeling satisfied without being too full. It’s pretty versatile too. You can garnish or top it with a huge variety of toppings, just like a baked potato. We used cheese, green onion, sour cream and bacon this time but you can choose any toppings you like.

For our recipe we went with grated potatoes since that would cook faster and because I like the texture it creates better. You can also cube the potatoes, which is a more traditional way of doing it.
