Ingredients

2 chicken breasts, sliced
4 medium potatoes
1 zucchini, chopped into bite size pieces
1 yellow onion, chopped
1 tomato, chopped
1 tsp corn starch
1 tbsp olive oil

Instructions

1.Peel and cube the potatoes and put in a pot with water to boil
2.In a frying pan, add the olive oil and bring to frying temperature
3.add the onion and zucchini, sautee until soft
4.add the chicken breasts and cook to 165º
5.stir in the tomato
6.make a slurry with the corn starch and 4 tbsp water and add to the frying pan
7.Once the potatoes are soft, drain the water and mash them
8.serve the chicken mix over the potatoes

This is a super healthy meal that is also satisfying. Chicken Zucchini on mashed potatoes combines several healthy ingredients and rich flavor. This recipe is easy to follow and serve.

Chicken provides a good, clean source of protein. You could use another meat or even tofu depending on the texture and protein amount you want in your dish. I chose chicken for it’s light taste because it makes a perfect canvas for the all of other flavors to work on.

The vegetables used are zucchini, onion, and tomato. That combination creates a strong, yet cohesive flavor punch. They are packed with nutrients. If you prefer, you can use pasta instead of mashed potatoes for the base. I’ve made it both ways with great success. I personally prefer potatoes for how easy it is to create a perfect bite with a little bit of everything.
